The 44-year-old man was at a fast food restaurant in Griffith on Friday night when police were called to the location after it was alleged he was intoxicated and causing trouble.
Once officers arrived, the man allegedly threw a drink he was holding at a police vehicle and used offensive language towards the officers.
The man was arrested and searched, with police allegedly locating a small amount of a prohibited drug in his pocket.
He was taken to Griffith police station where he allegedly spat on two female officers.
The man was charged with a string of offences, including assaulting police and possessing a prohibited drug.
He appeared in Griffith Bail Court on Saturday morning where bail was refused.
Police have also lamented the behaviour of a group of young Leeton residents after an "organised fight" was dispersed by officers on Sunday afternoon.
A group of teenagers was found in Kurrajong Avenue about 4pm, with police alleging a pre-arranged fight was set to take place.
Some of those involved may have brought weapons with them, with many of the youths leaving the scene when police arrived.
An iron bar was seized from the scene, with police investigations continuing.
It is anticipated action will be taken against some of those involved.
