It is believed the man, aged in his 40s, had his hand caught in a machine.
He was transported by ambulance to Griffith Base Hospital, but the extent of his injuries meant he required further treatment.
Snowy Hydro SouthCare media and communications manager Kate van Haalen said a helicopter was tasked from Canberra about 5.30pm.
"It took about one-and-a-half to two hours to get to Griffith Base Hospital, with a man in his 40s then transported to Canberra Hospital," she said.
"The individual had severe hand injuries that required emergency medical care.
"I believe the surgery he required was not available at the Griffith Base Hospital, which is why we were called in."
Freedom Foods has confirmed an employee did suffer an injury at its Murrami manufacturing base.
"Freedom Foods is co-operating with WorkCover (NSW) in its investigations of the incident," general manager operations - Leeton site Tim Moses said.
"Work has continued (on site)."
