“Everyone has their own recipes, everyone has their own way of doing things,” he said.
The committee is gearing up to host their second salami night on Saturday, August 27 from 7pm and Mr Amato said the many different secrets created many different salamis which was a big part of what made the night so great.
“It’s amazing, last year just the variety the colours, the tastes, the textures they were all totally different,” he said.
“These days there are so many people who are doing salami.
“It’s not just the Italian culture doing it anymore, it’s all different cultures.”
Mr Amato said the cross-cultural love of making salami ensured that last year’s sell out inaugural salami night had been such a hit.
“It’s just a great way to bring the whole town together,” he said.
The prize pool this year has plenty of bite to it with first prize for the best salami $200, second $100 and $50 for third place.
Two months in the making the committee have promised the night will have plenty of flavour.
“People can expect a great meal and a great time,” Mr Amato said.
“We will have two pigs on a stick, we’ve got goat, we’ve got pasta, there will be salads and traditional Italian potato dishes as well as tiramisu for the dessert.
“Everything, all of the food has been locally sourced, we try to stick to using everything from the local area.
“There will be some great entertainment by Duble from Griffith.
“You can expect it to be a good night, a night out of fine food and dancing.”
Not only will the night deliver a good time, but it’s also in the name of a good cause with all proceeds raised on the night to remain in the local community.
“The money will all be spent locally in the Leeton Catholic Parish,” Mr Amato said.
Tickets for this weekend’s salami night are available from Amato Real Estate and there will also be tickets available at the door on the night.
Adults tickets are $50, $20 for kids under 15 and children under five are free.
