While a completion date hasn't been set, it will be finished sometime in 2020.
The malt house is a Southern Cotton venture on Darlington Point Road and will include everything from a cellar door and production facility to a place to experience regional food, outdoor activities and more.
Building certificates have been issued for different elements of the development, with a huge range of professionals on hand to ensure the facility is top notch.

"It's really full steam ahead at the moment ... there's a lot of movement happening out there," Southern Cotton general manager Kate O'Callaghan said.
"We're deep in planning for the cellar door, our many experiences that we will offer and just how everything will look.
"We've had experts in engineering, interior design, architects and more out there helping us to make sure this is a top class facility where visitors and locals alike can come."
There are four pillars behind the philosophy of the Whitton Malt House.
They are:
- We grow: Utilising sun, water and rich Riverina soils, we produce some of the best malting grains in the world
- We malt: Our onsite malt house, Voyager Craft Malt, produces small batch artisanal malts from a diverse range of premium quality grains.
- We inspire: Our malt inspires some of the world's best craft brewers, distillers and bakers to innovate and push the boundaries.
- We share: Our one-of-a-kind in the world cellar door, brings together the incredible products produced from our malt and our region for you to enjoy in the one beautiful location.
Mrs O'Callaghan said there was nothing else in the world like the Whitton Malt House.
"We think it's very unique, but that it will appeal to many ... we've got some big plans," she said.
