That romantic occasion also turned out to be Valentine's Day in 1987 so, ever since then, the world has reminded them every year of when their anniversary is about to roll round.
Getting married on Valentine's Day wasn't exactly planned, but it was just how the date panned out for the couple, who remain happily married today.
The pair have three children, twins David and Matthew who were born the day before their wedding anniversary 26 years ago, as well as another son Adam.
The day was typical of February in Leeton on February 14, the temperature was hot, but the occasion was certainly worth celebrating.
The Mitchells originally met through mutual friends, but soon after Jan moved away to Sydney for work.
She was home visiting relatives one long weekend in July, 1982 when they bumped into each other again and a spark was ignited.
They have been together ever since, with Mr Mitchell proposing in Munich in August, 1985 while they were on a Contiki tour.
"February 14 just ended up being the date that worked for us," Mrs Mitchell said.
"I was aware of it, but Paul wasn't.

"We even had the colour red tied into the day, but he still didn't really click," she joked.
While chatting with the Mitchells, it is clear they are still very much in love.
They joke around with each other, but are also more than happy to lift the other one up.
They said the secret to a happy marriage was to remain best friends.
"Marry someone you love and love them back harder," Mr Mitchell said.
The couple said they both have their own likes and dislikes, but it is these things that complement each other at the same time.
"We've always been a really good team," Mrs Mitchell said.
The pair plan to spend their wedding anniversary going out for dinner as they do most years.
"We keep it pretty low key," Mr Mitchell said.
