Hoong Leong, 37, was walking with a friend in The Rocks after work when the bottle struck him in the shoulder before midnight on Tuesday.
He died after his lungs collapsed and he went into cardiac arrest.
Friends of Mr Leong - who was married and lived in Chatswood - have expressed their shock and grief.
"Goodbye my friend. You were one of the best," one friend wrote on Facebook on Thursday.
"I'm still in shock about what happened, my thoughts are with his family," wrote another.
Mr Leong was killed by a nine-kilogram portable gas cylinder that fell "from a great height" during Tuesday night's thunderstorm.
Detectives are continuing to investigate where the bottle came from.
"The bottle hit him in the shoulder," Detective Inspector David El-Badawi said on Wednesday.
"We believe it has come from a nearby apartment building but we don't know that yet."
Police want to hear from anyone who may be missing a gas bottle following what Det Insp El-Badawi said was "a tragic accident".
Officers inspected the scene outside the Malt Shovel Taphouse on Wednesday.
NSW Ambulance Superintendent Kath Rallings described Mr Leong's death as a "freak accident".
