Due to be held in September, the elections will now be held on December 4.
The decision was made over the weekend amid the coronavirus pandemic and its ongoing restrictions and case numbers in metropolitan Sydney.
These elections had already been postponed once, having been moved from September 2020 to the same month this year.
Councillor Maytom had been preparing to hang up his mayoral and councillor hat.
He and his fellow councillors will now stay on until December when the community will case their vote.
IN OTHER NEWS:
"I did expect this was going to happen and I do believe it should happen by the way - we are in a worst predicament than what we were this time last year when it was put off by 12 months," Cr Maytom said.
"I really couldn't understand how we were going ahead with it anyhow, so I was expecting this decision.
"I didn't plan anything directly for when I was going to retire from council, so for me I will just carry on for another three months.
"That's just life and I'm okay with it. I wouldn't walk away from it now. It's only three more months."
Cr Maytom said he didn't expect any of the current councillors to have an issue for staying on a little longer.
He was hopeful the extra time before the election would give anyone who is interested the chance to consider throwing their hat into the ring.
"In that way, in terms of people putting their hand up, I think it's a good thing we now have more time," Cr Maytom said.
"We have had some interest, but it would be great to have more. I think the last election there were 15 nominees, so the more we do get, the better really."
